These no-bake date energy bar are loaded with natural ingredients like dates, walnut, almonds, and nuts like pumpkin seeds and sunflower seeds. Being no-bake, they require very less time to prepare. Just get all ingredients in a food processor, pulse them for about 1-2 minutes and set them in a baking pan. Leave them overnight in the fridge to set in and cut them in the desired shape.

No-Bake Date Energy Bar
Ingredient 8-12 bar
2 cup dates seeds removed( I used mejdool date)
1 cup walnut
½ cup almond
½ cup grated coconut
A pinch of salt
½ cup mixed seeds like sunflower and pumpkin
Method
- First of all,clean the dates and remove seeds.
- In a food processor add walnut, almond, and coconut. Pulse for 10 seconds. Repeat this until dry fruits are broken into pieces.
- To this add seeds and dates. Pulse for 20 seconds. Repeat this for 2-3 times till dates are crushed and mixed with dry fruit mixture.
- Line a parchment paper in a baking pan or in a plate.
- Pour this mixture in the pan and set it with the help of a spatula. Spread some seeds on top. Set themand keep in the fridge until they firm.
- Cut them into the desired shape. No-bake date energy bar ready to serve with milk in the breakfast time or snack time.
Note
- You can use figs or apricot also to make such nut bars. Again there is no need to add any liquid ingredients.
- Mix and match dry fruits as per availability. A new combination will come out.

Can I use something else instead of this dates? Can't find them here. I wanted to make this for my mom. A healthy snack for her. She's diabetic.

Dates help in binding and making these bars sugar-free. Not sure about any other alternative for the diabetic situation.

Kathy, we just need Medjool dates to make these bars. Medjool dates are very soft and help in binding. It is a sticky crumbled mixture after grinding. If mixture looks crumbly then you can add few more dates to make them hold together

Hi i love how simple this is which is great for our busy morning but question do you know if i can freeze them if i wanna make a bunch ahead of time?

You can keep them for 1 month at room temperature. And freezing up to 3-4 months easily.

this is absolutely delicious and I loved it!The only suggestion I would offer is for the recipe to **very clearly indicate the type of date needed. When someone reads "(I used mejdool date)" this reads as a personal preference, not a necessary ingredient. It was only through reading through the comments after making it that the reason my bars were not staying together is because you need to use those specific dates and not dried dates.Will try again!

SO good! I added a handful of dried apricots and cherries. DIdn't have any seeds so just put more chopped walnuts on top. YUM!Reply

So good! I added cranberries, dried blueberries, pumpkin seeds, and sunflower seeds. They were crumbly but delicious. Next time I'll use Medjool dates, as I read in comments they are more moist.Reply

Can you use dried dates or do they need to be the non-dried version?

Emma, to make these evergy bars we need some moisture to hold everything. Soft & moist dates are best, Mejdool dates are perfect to make these vegan bars.
With dried dates, you can not attain this.
